When is the best time do Dodital Trek?

The best time to do this trek is from April to November barring the monsoon(Except July & August) as there are chances of landslides on the way during those rainy months.

What level of fitness is expected from me?

This trek is fairly easy. But it makes a lot of sense to spend some time before coming on a trekking holiday getting some additional exercise. The fitter you are, after all, the more enjoyable you will find the experience. For this trip you need to be aerobically fit and also comfortable with walking up to 7 hours on some days.
